If you’re looking at foundations, take a look at my Two Schools article, which is a gentle introduction to the fundamentals. A lot of texts (and teachers) tend to be quite dogmatic in how they present the foundation of the subject. I certainly found a lot of it quite confusing until I found (was recommended) a text that both made sense, but also reconciled some of the competing positions (Jaynes — excellent text, but graduate level).
Not sure where you’re at, but you might like to look at Hacking’s book on probability and inductive logic. It’s foundational, quite philosophical, but incredibly clear and eminently readable (as is everything Hacking writes).
